In this instructable I will show you how to make Apple Roses. This apple rose pastry (mini-pie) recipe is super easy to make and something different that you can add to your repertoire of desserts and treats. They are sure to impress your family and friends. If you love apple desserts you have got to try these. Next time you want to make some sort of an apple treat make these elegant and tasty apple roses! Step 1: Ingredients/Tools

Ingredients:

  • 2 cups of water
  • 1 medium to large lemon (halved)
  • 2 Tbsp of brown sugar (30g)
  • 2 Tbsp of white granulated sugar (30g)
  • 1/2 tsp. of ground cinnamon (3g)
  • 1/2 tsp. of ground nutmeg (3g)
  • 2 red apples (red delicious, Pink Lady, gala, etc.)
  • 1 Frozen puff pastry dough or pie crust dough (or use homemade)
  • 3 to 4 Tbsp. of apple jelly (or your favorite jelly or jam) (45 to 60g)

Step 2: Create the Lemon Water

First let's preheat the oven to 375 F (190 C). Place the rack in the middle position. Next in a large bowl pour your water and squeeze the juice out of one lemon into the water.

Step 3: Slice Slice Soak

Next let's core and slice our two apples really thin, no more then 1/8th of an inch, if they are too thick they won't roll up very well. You can use a knife or a Mandolin slicer. After you are done slicing the apples place them in the lemon water. The lemon water will help keep them from browning.

Step 4: Microwave and Drain

Next let's put the bowl of apples in the microwave and heat it on high for about 3 minutes. If you don't have a microwave, you can pour it into a pot and heat it up on the stove, just until you see little bubbles. Next drain out all of the liquid. Heating them up helps them to be more flexible so they will roll easier. :)

Step 5: Sugar and Spice

Now combine your sugars, cinnamon, and nutmeg in a bowl. Use a small whisk or a fork to mix them together.

Step 6: Coat the Apple

Next pour about half of the sugar mixture over the apples and using your clean hands mix the apples until they are coated with the sugar and spices.

Step 7: Roll and Cut

Next on a floured surface roll out your puff pastry dough or pie crust dough. We should be able to get 6 long rectangle strips from it. If using a circular pie crust try and roll it into more of a rectangle. If not, don't worry about it too much. Then brush off any extra flour that may be on the tops of the strips of dough.

Step 8: Baste and Dust

Now let's heat up a small bowl of apple jelly (or whatever kind of jelly or jam you want to use.) Only takes about 25 to 30 seconds in the microwave. Then baste it on top of a strip of dough. Next come in and dust the top with some sugar mixture. I was using a fork because I was too lazy to get a spoon. But the fork helps to control the amount of sugar that goes on, haha.

Step 9: Place, Fold, Roll

Now is the fun part! Place the apple slides on the upper half of the strip of dough, so about half of the apple slice is hanging off the edge. I usually can get 5 slices down first, then I take about three more very thin slices and over lap in the middle. Next fold over the strip of dough, forming a little pocked of sorts. Pinch each end shut, then roll it up fairly tightly. If the apples slices start to slip out just push them back in, not to worry.

Step 10: Bake, Remove, Cool

Now place those unbaked apple roses in a kitchen sprayed or greased and floured muffin pan. Place the apple roses in the oven and bake at 375 F (190 C) for about 40 minutes. Check it after 30 minutes, if the they are getting too brown, place some aluminum foil over the tops. When done they should be a nice golden brown. Now while still warm we need to remove them, if you leave them in the pan for too long while cooling they have a tendency to stick and are harder to get out. Run a butter knife around the edges, then with a spoon pop them out. Place them on a cookie rack to cool.

Step 11: Powdered Sugar Snow Storm!!!

Now dust the tops of those awesome apple roses with a snow storm of powdered sugar! haha. Just kidding, a light dusting of powdered sugar (confectioner's) is perfect. But you can do what you want ;). They are ready to eat! They also taste really good with some caramel sauce drizzled over them...mmmm. Enjoy! :)
